Meal Plan Monday – 8.15 to 8.21

This is our last week before school and football hit high-gear. I think it’ll be nice to have dinner together each night. Since we don’t usually eat everything that these recipes make, I made sure to find some that freeze well. {it gets old eating the same thing after a while}

I also found some great {and somewhat healthy} snacks to make and freeze for the next couple of weeks. This also makes it so much easier for us to eat on a budget and not cram it all in before it goes bad. {my mouth is watering just looking at this weeks menu}

Monday – Stuffed Bell Peppers

Tuesday – Pasta & Brocoli w/ fruit salad

Wednesday – Kitchen Closed/Dad’s birthday dinner

Thursday – Creamy Avacado Chicken Salad

Friday – Leftovers

Saturday breakfast – Pancakes & turkey bacon

Saturday Dinner – Brats & Roasted Cilantro Corn

Kitchen Creations: Homemade Chicken Stock

With all the cooking I’ve done since we got married, I have always thought it was a waste to buy chicken stock or to through away the bones. I’ve seen other people make stock and heard about it, but was intimidated to make it myself..

…and….

IT WAS SO EASY!

After we bought a pre-cooked chicken from the store for food last week, I made sure we saved the bones. While I was at the museum with my mom, I found a recipe for the stock in the gift shop. To my knowledge you just boiled the bones…but no…there were vegetables and spices. Good thing we had everything on hand (less the carrots) so it was just a matter of chopping.
