Meal Planning Monday

Even though we have a little over a week until it’s officially spring, we are seeing so many signs already. Starting last week, the temps stayed at our around 60. The same for this week, with Wednesday’s high in the 70s! This is PERFECT weather for this Texas gal :) -

I can’t wait for the humid heat that I keep hearing about….{apparently everyone up here thinks Texas is a desert, because they assume 105 in Texas is the same as 85 here with humidity}.  I don’t know what they’re talking about, because I grew up between two lakes and within driving distance of a several dozen. They were not natural lakes like the ones here, so the climate did not work well on those hot summer days. Hot is hot, but everyone has to make the case for their own “extreme” weather.

Needless to say, Eric and I did venture out to a Friday night fish fry. Everyone swears you haven’t had fried fish before unless you’ve had it here. {another Sconie - ism, but with so many lakes it only makes sense}. So we went to a small town a gal from work recommended to try some Wisconsin Fried Fish. The place was very authentic with wood paneling and all, but we forgot it was Lent season and had to wait an hour for a table. The meal was good, but nothing extraordinary on my radar {might get struck by lightning for saying that one}. Either way it was fun to be back in a small town and even met one of my coworker’s high school band teacher. {small world}

We’re looking forward to more sunshine and longer days, but this time change is going to be hard on all of us. Hope some good food and fun will help us through it :)

Thursday - Leftover buffet

Friday - Easy Creamy Pork Tenderloin with Fancy Green Beans

Saturday - Kitchen Closed

Sunday - Shrimp Scampi with pasta and veggies (eMeals)
